I would say, that depends mainly on the bandwith you are going to use, but
there may also be another limit. cipe.info says:

`cipe_maxdev=(number)'
     Set the number of channels this module manages. E.g. with
     `cipe_maxdev=4' the devices `cipcb0' through `cipcb3' are
     available. Maximum is 99. Since CIPE 1.2, there is no need to set
     this, since channels are allocated dynamically.

So from this it's not clear, if you can go beyond 99 when the channels are
allocated dynamically.

But look to the startup message:
cipcb: CIPE driver vers 1.5.4 (c) Olaf Titz 1996-2000, 100 channels, debug=0
